A new series of Italian Cooking Masterclasses starts on Saturday September 9th 2017

 

 

 

 

Learn the tricks of the trade in the capable hands of  
Executive Chef, Doxis Bekris and the Solo culinary team,the interactive classes

will teach you  how to cook flavoursome Italian dishes from scratch

as well as demonstrating professional culinary skills and techniques.

Starting 9th September,11:30am - 2pm

AED 300 per person, inclusive of soft beverages

 

 9th September - Gnocchi three-ways

No one can resist fresh, handmade gnocchi! Learn to cook your own melt-in-the-mouth Italian dumplings in this technique-driven masterclass. The Solo chefs will show you how to create three different variations of gnocchi – traditional potato, ricotta (gnudi) and semolina – along with a trio of paired sauces.

 

 16th September – Il Classico

There’s three classic dishes that pack a flavoursome punch on the menu this week as the Solo chefs will be demonstrating how to make Cannelloni Classico with spinach and parmesan cream, Pappardelle Norcia with sausage, porcini and truffle, and for dessert Pear and Ginger Crostata. Attendees will learn how to prepare homemade pasta, balance flavours and make the perfect pastry.

 

 23rd September – Festa Italiana

Take your culinary skills to the next level as Chef Doxis and the Solo team show you how to cook up an Italian feast! Starting with handmade focaccia followed by Bruschetta della Casa, aspiring chefs will also learn how to cook two classic pasta dishes - Bucatini all’Amatriciana and Spaghetti Carbonara.

 

 30th September – Sardinian Specialities

Learn about the unique and diverse cuisine of Sardinia, Italy’s second largest island, in this week’s class. Chef Doxis will demonstrate how to make the local delicacy Culurgiones, stuffed pockets of pasta which translates to ‘little bundles’. Next on the menu is Malloreddus, a typical Sardinian pasta flavoured with saffron, and for dessert the moreish Seadas, fritters with cheese and honey.

 

 7th October – Dinner Party Dishes

The Solo team have the perfect menu to impress your dinner party guests with home-cooked Italian cuisine. Learn how to make freshly baked Panne Carasau, an Instagram-worthy Capricciosa salad, delicious pan-seared scallops and a crowd-pleasing Linguini ai Frutti di Mare.

 

 14th October – Antipasti and Pasta

This week budding chefs will learn how to make two moreish antipasti dishes, Giardiniera and Pickled Eggplant, and for main course there’s two classic pasta dishes on the menu; a spicy and flavourful Penne Arrabiata, and a creamy and satisfying Spaghetti Carbonara. The expert Solo chefs will showcase professional techniques and tips in this interactive session.

 

 

 21st October – Seafood Supper

There is much more to Italian food than just pizza and pasta – in this hands-on class Chef Doxis will teach foodies how to make three traditional Italian seafood dishes, each using a different technique and cooking style. Together with your classmates you will serve up Amberjack tartare, pan-seared salmon with puttanesca sauce, and baked seabass with fennel, lemon, and capers.

 

 

 28th October – Perfect Pasta

The Solo chefs are pasta pros and in this practical class they will share their tricks of the trade and demonstrate how to make a flawless pasta dish. Practice the techniques to make perfect pasta dough every time and cook tasty sauces from scratch, before serving up and
tucking in to farfalle Lombardy with meatballs, spaghetti with mussels, and linguine with homemade pesto. Delizioso!

 

 

 4th November – Taste of Sicily

The rich, bold taste of Sicily lands in Dubai with this fun and interactive class. Learn how to cook three authentic, regional dishes; Involtini di Spada (swordfish rolls), Parmigiana di Melanzane and Cassata Siciliana. Throughout the class you will learn culinary tips and tricks from the expert Solo chefs.

 

 

 11th November - La Dolce Vita

There is a mouth-watering menu for the last class of the series. Learn how to prepare a delicious Carre di Agnello, grilled trimmed rack of lamb served with creamy polenta, caponata and thyme jus. Chef Doxis will reveal the secret recipe to Solo’s famous lasagne, and make sure you save some space to enjoy dessert, a creamy Panna Cotta with morelo cherries and biscotti.
